From research and discovery of a valuable indigenous Vermentino clone comes this Rosé with its characteristic pink peony, delicate and very elegant aroma, with notes of red fruits like cherry and delicate berries with subtle spicy references. The grapes, once in the cellar, were de-stemmed and softly pressed. The juice has macerated on the skins at low heat press, for about 5 hours, in order to obtain a must of adequate color but without astringent notes. By pressing, are then originated juice of different fractions, each of which was cooled for 24 hours so as to favor the natural deposition of sediments. The clear must was poured into stainless steel tanks where alcoholic fermentation took place at a constantly kept temperature toa maximum of 16 ° C....
